For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

Dough loves a humid environment to proof/grow! I have great results spraying lightly with water, then placing in a warm location. You don't want the dough to dry out.

I don't know what happened... followed the recipe, load doubled in size for the proof on the tin, in the oven, checked ages 30mins & it was still very raw, went in for another 20mins, at this point it was cooked but halved in height from it's original proof, it was as high as a focaccia 🤷🏽♀️

Help what happened, I made the dough exactly as the recipe, i then let the dough rise in a warm spot , in the microwave, it took 2 hours to rise to the top, looked great, then i took it out to put in the oven and it completely deflated, what have i done wrong?

For those asking about lids... Using a lid is personal preference & creates a square loaf If you intend to use a lid be sure to slide the lid on handle first. And get it in the oven when the dough is a couple centimetres away from the lid (it will grow ever so slightly in the oven).

KatFishStew: From what I can see, it's not really a 15 minute proof, just a little rest. This dough only proofs once in the bread tin before it's baked. I'm going to give this a go, as I normally proof my bread twice, but this method would save so much time.
