For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- 1. Cut the mozzarella into blocks and add to the bow.
Set at 00:10, at speed 3.5.
2. Add the egg yolks
Set at 01:00, at 50ºC at speed 4.
Let the consistency stand for ± 3 - 5 minutes and remove from the bowl with the spatula. Form a ball.
Place the ball on a silicone mat and put parchment paper over the ball.
Roll the dough smooth and thin with a rolling pin.
Let the dough stand in the fridge for ± 40 minutes.
Remove the parchment paper.
Cut the dough into your preferred shapes (lasagne, strips etc).
Remove the pasta from the mat and keep it in the fridge overnight.
This pasta can be frozen too - it works well, even after 60 days.
Cook the pasta in boiling water for a minute and serve with your favourite toppings and sauces.

Tip
Use parchment paper when you roll the dough - my image - I used cling wrap and it didn't come out too smooth.
