- 60 grams lemon juice

Recipe's preparation
To make cake mixture, place all ingredients into TM bowl and beat for 30 seconds on speed 5. Remove from bowl and set aside.
To make lemon curd, place all ingredients into TM bowl and cook at 100 degrees for 5 minutes on speed 4.
Grease and line a round cake tin.
Spread half the cake mixture into the base of the tin (the cake mixture will be quite thick, I usually spread it with wet fingertips.)
Pour lemon curd over cake mixture (the lemon curd mixture will be quite runny.)
Dollop 1/2 teaspoonfuls of remaining cake mixture over the top of the lemon curd.
Bake in 180 degree celsius oven for half an hour.
Eat warm or cold.

Delicious cake. I also made the curd first then the pastry without washing the bowl. I also added lemon rind to the pastry. Because the bowl was warm I only mixed the pastry for 10 sec. Before baking I spread slivered almonds for some crunch. Served with berries and cream, room temperature.

We had leftovers which tasted great straight out of the fridge two days later!

So delicious! I double to recipe, but only increase the sugar to 150g. I make the curd first and don't wash the thermy in-between. I also make the curd/base the day before, put it in the fridge separately to cool and put together and bake the next morning 👌

great tip. I do the same thing and don't double the sugar for the cake.
I use my air fryer to bake the double recipe cake. 160 C and 20minutes. The top turns out beautifully with a slight crunch.
