Tuna and rocket risoni salad

  • 1000 g water
  • 200 g dried risoni pasta
  • 350 g cauliflower
  • 60 g rocket leaves
  • 20 g parsley
  • 10 stalk fresh chives
  • 1 Lebanese cucumber
  • 1 avocado
  • 80 g sun-dried tomatoes

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Add 1000g water to Thermomix bowl and bring to the boil 6 min/100°C/speed 1.
  2. Meanwhile, chop 350g cauliflower into small florets and place into Varoma dish.
  3. Once water has boiled, add 200g risoni to the bowl and cook 10 min/Varoma/speed 1, with Varoma in position to cook the cauliflower.
  4. Then, prepare salad ingredients. Weigh out rocket into a serving bowl and add chopped parsley and chives. Dice cucumber and add to the bowl, along with the sun dried tomatoes and diced avocado.
  5. Set cauliflower aside to cool in Varoma and drain risoni into the simmering basket, discarding water. Rinse with cold water to refresh. Add to serving bowl with salad.

    Then, drain tuna through simmering basket and add to serving bowl, along with the cauliflower.
  6. To finish, drizzle salad with olive oil and lemon juice, plus a good sprinkle of salt and pepper. Toss well to combine.
