Tuna and rocket risoni salad
- 1000 g water
- 200 g dried risoni pasta
- 350 g cauliflower
- 60 g rocket leaves
- 20 g parsley
- 10 stalk fresh chives
- 1 Lebanese cucumber
- 1 avocado
- 80 g sun-dried tomatoes
- 425 g Canned Tuna
- 2 tbsp pine nuts
- 2 tbsp extra virgin olive oil
- 2 tbsp lemon juice

Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Recipe's preparation
- Add 1000g water to Thermomix bowl and bring to the boil 6 min/100°C/speed 1.
- Meanwhile, chop 350g cauliflower into small florets and place into Varoma dish.
- Once water has boiled, add 200g risoni to the bowl and cook 10 min/Varoma/speed 1, with Varoma in position to cook the cauliflower.
- Then, prepare salad ingredients. Weigh out rocket into a serving bowl and add chopped parsley and chives. Dice cucumber and add to the bowl, along with the sun dried tomatoes and diced avocado.
- Set cauliflower aside to cool in Varoma and drain risoni into the simmering basket, discarding water. Rinse with cold water to refresh. Add to serving bowl with salad.
Then, drain tuna through simmering basket and add to serving bowl, along with the cauliflower. - To finish, drizzle salad with olive oil and lemon juice, plus a good sprinkle of salt and pepper. Toss well to combine.
