For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Corn and zucchini fritters
  1. Place 500g water into Thermomix mixing bowl. Cut corn cobs into thirds and place into simmering basket. Cook, 10 min/100°C/speed 1 or until corn is lightly steamed.
  2. Meanwhile, gather your remaining ingredients and prepare any sides.
  3. Once corn is cooked, remove simmering basket and set aside to cool slightly, or refresh under cold water if necessary. Drain water. Then, place 300g zucchini into Thermomix® bowl and chop 3 sec/speed 5 or until nicely grated.
  4. Remove corn from cobs using a sharp knife, and add to bowl with zucchini.
  5. Add 4 eggs, 125g milk, 250g self raising flour, 2 tsp vegetable stock paste, 1/2 tsp ground coriander, 1/2 tsp cumin seeds and mix 10 sec/Counter-clockwise operation/speed 4. If needed, scrape down sides and mix 3 sec/Counter-clockwise operation/speed 4.
  6. Pre-heat a skillet or pan (I use an open sandwich press) and cook fritters in batches until golden brown and cooked through.
