Zucchini and Haloumi Frittera with Yoghurt and Salsa

Zucchini and Haloumi Frittera with Yoghurt and Salsa

  • 4 zucchini
  • 125 g haloumi cheese
  • 1/4 C Flat Leaf Parsley lightly ripped
  • 1 C Gluten free Breadcrumbs
  • 2 eggs
  • 1 red onion


  • 4 Tomatoes, cut into quarters
  • 1 Cucumber cut into quarters
  • 1/3 C torn mint leaves
  • 3/4 C plain greek yoghurt

Recipe's preparation

  1. Add Zucchini, 1/2 red onion and Haloumi and parsley into bowl, grate 5secs speed 10
    Add Breadcrumbs, eggs, place lid on with measuring cup inserted combine 6secs speed 4

    Heat non stick fry pan med-high, add a spray of oil. Drop 3-4 heaped tablespoons of batter to hot pan and cook for 3-4mins each side or until golden brown

    To prep salsa:
    Cut tomatoes, cucumber into quarters and combine in small bowl with remaining onion and mint.

    To serve:
    Place fritters on plate, add salsa to the sides and a dolop of yoghurt on top of the fritters

You can replace zucchini with carrot

Use can use normal breadcrumbs if you don't want it gluten free
