Basmati rice pilaf with fruit and nuts

  • 200 g basmati rice
  • 1 brown onion, halved
  • 2 garlic cloves
  • 40 g Butter, cubed
  • 1/2 tsp ground cumin
  • 1/2 tsp ground turmeric
  • 1/4 tsp ground cinnamon
  • 1/2 tsp salt, fine
  • 400 g water
  • 100 g mixed dried fruit, such as golden raisins, chopped dates or apricots
  • 40 g slivered almonds
  • 3 sprigs fresh mint, roughly chopped

Recipe's preparation

    Basmati rice pilaf with fruit and nuts
  1. Place simmering basket into Thermomix® bowl and weigh in 200g of basmati rice. Rinse thoroughly until water runs clear and set aside.
  2. Place 1 brown onion and 2 cloves of garlic into Thermomix® bowl and chop 3 seconds/speed 5. Scrape down sides. Then add 40g butter, 1/2 tsp cumin, 1/2 tsp turmeric, 1/4 tsp cinnamon and cook 4 minutes/120 degrees/speed 1.
  3. Add rinsed rice to Thermomix® bowl along with 1/2 tsp salt and 400g of water, stir to combine, then select TM6 'rice cooker' mode. Ensure simmering basket is placed ontop of the lid, rather than the measuring cup. The mode should take about 22-25 minutes to complete.
  4. Meanwhile, chop dried fruit and mint.
    Once rice is cooked, transfer to a serving bowl and stir through fruit, nuts and mint.

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
