  • 500 g rhubarb compote, (see tips)
  • 400 g lemon juice

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Moonacres Kitchen rhubarb curd (chef Stephen Santucci)
  1. Place lemon peel and sugar into mixing bowl and mill 10 seconds/speed 10.
  2. Add remaining ingredients and cook 15 minutes/90°C/speed 4.
  3. Makes enough to fill approximate 8 x 250ml jars.

Tip

To make your own rhubuarb compote for this recipe you will need approximately 600g of rhuburb stalks, cut into 2cm pieces. Combine in the Thermomix® with about 50g of raw sugar and cook 15 minutes/100°C/speed 1. Then, puree for 20 seconds/speed 8.

Use clean, sterilised jars and keep refrigerated.
