Ingredients

Kumara & Bacon Soup

  • 15 g Butter
  • 15 g olive oil
  • 4 slices bacon, chopped
  • 1 piece red onion, whole onion, quartered
  • 700 g kumara, peeled & chopped
  • 750 g chicken stock
  • 125 g sour cream
  • 1 to taste salt
  • 1 to taste pepper, ground
  • 1 stalks parsley, chopped, to garnish
  • 100 g Milk, to thin when serving if needed

Recipe's preparation

  1. Place butter, olive oil, bacon, red onion in Closed lid"Closed lid" . Pulse, then scrape down sides of bowl. Cook 100deg 3 mins sp1.
  2. Add kumara & chicken stock (I make my own, Chicken bone broth/stock by Wise Woman Ways).
    Cook 100deg 20 mins, sp1 with simmering basket instead of MC if a thicker soup is desired.
  3. Taste test & add salt & pepper.
    Add sour cream.
    Puree 40 seconds going slowly from sp1 - sp10.
