Banana Bread (Gluten, Dairy and Refined Sugar Free)

Banana Bread

  • 100 g dates
  • 75 g coconut oil
  • 50 g olive oil spread
  • 3 eggs
  • 3 ripe bananas
  • 85 g Coconut Flour
  • 65 g almond meal
  • 2 tsp baking powder
  • 2 tsp Guar Gum
  • 70 g Coconut sugar
  • 1 tsp ground cinnamon

Recipe's preparation

  1. 1. Preheat oven to 180°C. Grease and line the base and side of an 11 x 21cm x 6cm deep (base) loaf pan.
    2. Put dates in Thermomix. Chop for 10 seconds / speed 6. Empty dates into a bowl.
    3. Put coconut oil and olive oil spread in Thermomix for 1 – 2 minutes / 60C / speed 1.
    4. Add bananas and eggs to Thermomix. Blend for 5 seconds / Speed 5. Scrape down sides.
    5. Add coconut flour, almond meal, coconut sugar, guar gum, baking powder, cinnamon and chopped dates to Banana mixture in Thermomix. Mix for 1 minute / speed 2. If required, scrape down sides and mix for 10 seconds / speed 2 
    6. Spoon into prepared pan. Smooth the surface. Bake for 45-50 minutes or until a skewer inserted into the centre comes out clean. Set aside in the pan for 10 minutes before turning out onto a wire rack.

Tip

Can be sliced and frozen. Allow to thaw for 30-60 minutes before eating

    It was too heavy for me and too much of a strong banana flavour.Maybe I did something wrong.
