Muffin Mixture
- 520 g plain flour
- 6 teaspoons baking powder
- 200 g sugar
- 260 g Rice Bran Oil
- 1/2 teaspoon salt
- 3 teaspoons vanilla
- 3 eggs
- 450 g Milk
Feijoas
- 8 feijoas, Large or 16 small cut and pulp removed
Icing
- 200 g icing sugar
- 1/2 milled orange peel
- juice of an orange

Recipe's preparation
Peel a whole orange, mill peel in TM speed 9/15 sec or until peel is finely chopped. Remove 1/2 the peel and set aside.
With 1/2 the orange peel still in TM, place Feijoas pulp into TM bowl and mill speed 4/2 seconds. Set aside in another bowl.
Use a spring loaded 6cm across icecream scoop, scoop out mixture into muffin cases.
When all the mixture is evenly distributed. Take the reserved feijoa/orange mixture and evenly distribute over the 20 muffins. Gently poke each spoonful into the muffin mix and stir around a little.
Orange Icing:
In a clean dry TM bowl, place icing sugar, reserved orange rind and orange juice. Blend 6 sec/speed 6. Scrape sides, 3 sec/speed 6.
When muffins are cooled, spread orange icing over them, then enjoy.
Preheat oven 200 degrees Celsius (175 degrees C fanbake). Line muffin tins with paper cases.
