Sugar free berry and coconut slice

  • 150 g almond meal
  • 150 g unsalted butter
  • 25 g Coconut Flour
  • 100 g Shredded coconut

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Make the base
  1. Preheat oven to 180°C, grease and line a slice tin with baking paper (mine is rectangular, approx 30x20cm).
    Add almond meal, butter and coconut flour Closed lid, 20 secs, speed 4.
    Add one egg, 1 tsp vanilla paste, 1 tsp cinnamon Closed lid, 5 seconds speed 4. Press the mixture evenly into the prepared tin and bake 15 minutes or until golden.
    Remove from oven and let cool slightly. Clean & dry TM bowl.
  2. Make the filling
  3. While the base is in the oven, prepare the filling:
    Place berries into Closed lid, puree 5 seconds, speed 7. Scrape the bowl with spatula and repeat until smooth.
    Put aside in a bowl and rinse TM bowl.
  4. Make the topping
  5. Add shredded coconut, two eggs and 1 tsp vanilla paste Closed lid, 10 seconds Counter-clockwise operation sp.1 or until just combined. Set aside.
  6. Assemble and bake
  7. Spread the berry puree on top of the cooled base.
    Add topping (press slightly).
    Return to the oven for 30 minutes.
    Cool and cut into pieces.

Tip

The base mixture is quite sticky, using a spatula dipped in water helps (or wet, but clean, fingers)
