Lactation Anzac Cookies

  • 280 grams plain flour
  • 30 grams almond meal
  • 30 grams Flaxeed Meal
  • 200 grams rolled oats
  • 200 grams caster sugar
  • 150 grams dessicated coconut
  • 300 grams Butter
  • 150 grams golden syrup
  • 100 grams almonds
  • 3 tablespoons water
  • 1 teaspoons bicarbonate of soda

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. Preheat oven to 160 C. Line 3 baking trays with baking paper.
    2. Chop almonds 4 sec speed 6 & set aside.
    3. Place butter & golden syrup into mixing bowl & heat 2 min/60 degrees/speed 2. Scrape down sides of mixing bowl with spatula & repeat step again if butter not melted.
    4. Add bicarb of soda & mix 5 sec/speed 3.
    5. Add water and mix 5 sec/speed 4.
    6. Add dry ingredients: Reserved chopped almonds, flour, almond meal, flaxeed meal, rolled oats, catser sugar, dessicated coconut, malted milk powder. Mix 12 sec/Counter-clockwise operation/speed 4.
    7. Roll into approx 1 tbsp size balls, flatten to approx 7cm in diameter. Repeat with remaning mixture leaving space inbetween mixture for biscuits to spread during baking.
    7. Bake for 12-15 mins. Check bottom of biscuits for doneness.
    8. Leave for 5 mins to slightly cool before transferring to wire rack or enjoy warm.

Tip

This recipe makes a large amount. They freeze fabulously and thus can be enjoyed over a long time. If you wanted to make less, halve the quantities. Amazing as gifts for new mothers!
