  • 140 g caster sugar
  • 180 g Butter, Finely Chopped
  • 80 g lemon juice
  • 2 teaspoons lemon zest, Finely Grated

Recipe's preparation

  1. Insert Butterfly.  Add all ingredients and cook for 12 minutes, 80 degrees, speed 3.

  2. Place curd in bowl and cover surface with plastic wrap; chill for 3 hours or until cold and thick.

    Thank you for this recipe. Had leftover yolks from making pavlova so tried this. I used 100g of granulated monk fruit in place of sugar and it is delicious, whole family was licking the bowl. We'll now be having lemon curd on top of the pav!

    Beautiful recipe, equal parts tart and sweet. I used Natvia in place of sugar and left the MC off while cooking (straining basket on top to avoid splashes) It was thick and creamy straight from the bowl. Perfect!
