Ingredients

4 portion(s)

4 whole eggs

  • 2 litre water
  • 12 slices spring onion
  • 8 slices red chilli
  • 4 portions seasonal vegetables

Recipe's preparation

    To prepare
  1. Add water to mixing bowl

  2. Set tempriture to 65 degrees and bring water up to temriture, about 5 minutes

  3. Add eggs to water with a ladel and reset tempriture to 65 degrees for 45 minutes speed 3

  4. Remove eggs and add seasonal vegtables that only need blanching like snow peas, asparagus or samphire to water, 65 degrees 2 minutes

  5. Peel Eggs from top 3/4 and slide out of shell into small dish or onto toast, remove vegtables and top with chilli and spring onion.

  6. serve immediatly.

Tip

You can also add a Parmesan foam if you have a iSi funnel,sieve & whip.

For the Parmesan Foam

-  300g  cream

- 300g grated Parmigiano cheese

- 300g  egg whites

- Pinch of Black pepper and nutmeg

1- Heat the cream in the Thermomix  (60° ).

2- Add the Parmesan and mix at the maximum speed until it is a smooth cream.

3- Lower the temperature.

4- Add the egg whites and season with black pepper and nutmeg.

5- Pass through the iSi funnel and sieve and pour into a 1L iSi Whip.

6- Charge the 1L iSi Whip with two charges and shake.

 

7- Keep until time to serve heated at 70°C in water bath or bain marie.
