Cheese Ball Wreath

  • 45 grams natural almonds, roasted
  • 10 grams sesame seeds, toasted
  • 35 grams Pecans or walnuts
  • 50 grams wasabi peas or pistachios
  • 170 grams dried cranberries, at fridge temperature
  • 15 grams Continental Parsley, approx 6 sprigs
  • 200 grams gouda cheese, chopped in 2-3cm pieces
  • 150 grams goats cheese
  • 250 grams cream cheese, chopped
  • 12 grams honey, approx 2 tsp
  • 2 --- green shallots, or chives
  • olive leaves plus fresh herbs (rosemary, thyme, sage sprigs, bay leaves) to decorate

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.       If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Pre-heat oven at 200deg and toast 45g natural almonds and 3tsp / 10g sesame seeds
  2. Place 35g pecans or walnuts and 45g natural almonds, roasted in TM bowl and crush 3 sec/speed 6 or until finely chopped. Set aside in a bowl.
  3. Place 50g wasabi peas, or pistachios in TM bowl and crush 3 sec/speed 6 or until very finely chopped. Set aside in a bowl.
  4. Chop 170g dried cranberries and toasted sesame seeds for 10 sec/speed 10 or until finely chopped, then set aside in a bowl.
  5. Chop 6 sprigs/ 15 g continental parsley 6 sec/speed 6. scrape down and repeat. Set aside, mixing with crushed wasabi peas/ pistachios in a bowl. Rinse and dry TM bowl.
  6. Grate 200g gouda cheese for 10 sec/speed 7. Scrape down sides.
  7. Combine 150g goats cheese, 200g gouda cheese, 250g cream cheese, 2tsp / 12g honey and 2 green shallots or chives, thinly sliced for 30 sec/speed 6. Scrape down sides and repeat, until mixture is well combined.
    Roll teaspoons of cheese mixture into 60 balls.
  8. Roll 1/3 of the balls in the nuts mixture, pressing firmly to coat. Roll 1/3 of the balls in the wasabi / pistachio mixture, pressing firmly to coat. Roll the remaining 1/3 of the balls in the cranberry mixture, pressing firmly to coat.
  9. Store in the fridge until ready to assemble, for up to 3 days. To assemble, arrange and stack the cheese balls in a ring shape on a serving board or platter. Decorate with the olive leaves, rosemary, thyme, sage sprigs and bay leaves, to serve.

Tip

- The cheese balls are great on their own or as a part of a nibbles platter. Make them up to 3 days in advance. Assemble wreath 1 day in advance and store in the fridge.

- The cranberries tend to get a little sticky. Run a knife through them to separate.

- Substitute olive leaves for more bay leaves if you prefer.
