- 920 g caster sugar
- 200 g full cream milk
- 60 g unsalted butter
- 170 g condensed milk

- 1. Add all ingredients to the bowl and cook for 20 minutes/80°C/Speed 4 until the sugar has dissolved.
2. Cook a further 50 minutes/Varoma Temperature/Speed 1/Measuring Cup OFF.
3. Remove the lid and scrape down the sides of the bowl to remove any sugar crystals and mix 10 seconds/Speed 3.
4. Cook 25 minutes/Varoma Temperature/Speed 1 until the mixture is a golden/light tan colour. Remove a half a teaspoon amount, it should set firm but not solid in a few minutes; the temperature of the mixture will be 110°C. (Continue to cook at 2 minute intervals if necessary until golden ).
5. Place the Simmering basket on top of the lid and beat 3 minutes/Speed 5/Measuring Cup OFF. (Steam can escape but spits are safely caught by the basket.)
6. Add flavouring if you wish, such as vanilla essence, rum and raisin, coconut, cherry etc. but turn up the speed gradually if the flavourings are liquid, as they can splash out. Beat again 5 minutes/Speed 7/Measuring Cup OFF/internal steaming basket on top – until the mix is a bit grainy. - 7. Immediately pour tablet mixture out into a lined tray. Allow to cool for 10 minutes, while still in the tray, score the top of the tablet into small squares. Once fully cooled remove from the tray before cutting through and separating the pieces.
Tip
I tasted Scottish tablet for the first time on my recent trip to Edinburgh. I also had it in ice cream. I was in love... I did bring a box home for the family which didn't last more than a day! A followed a few recipes which just didn't work so I've tweeked it.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
