Lactation Caramel Slice

  • 300 grams dates
  • 140 grams raw cashews
  • 35 grams Flaxseed, or Flaxseed Meal
  • 100 grams rolled oats
  • 2 tablespoons brewers yeast
  • 2 teaspoons Cacao Poweder
  • 80 grams coconut oil
  • 90 grams Maple syrup
  • 1 teaspoon vanilla extract
  • 150 grams dark chocolate
  • 20 grams coconut oil

Recipe's preparation

    Prepare Caramel Center
  1. Soak dates and cashews in separate bowls of boiling water for 15 minutes.
  2. Make Base
  3. Line a regular slice tin with baking paper
  4. In a clean and dry mixing bown mill flaxseed (linseed) on Speed 10 for 15 seconds (if not using falxseed meal)
  5. Add remaining dry ingredients (oats, brewers yeast, cacao powder) and mix together on speed 2 for 3 seconds
  6. Add coconut oil, maple syrup and vanilla extract and combine on speed 1.5 for 40 seconds, with temp of 40°C if your coconut oil is solid. Or until will combined.
  7. Press base firmly into prepared slice tin and put into the fridge.
  8. Make Caramel Filling
  9. Drain dates
  10. Drain and rinse cashews.
  11. Add dates and cashews to mixing bowl and mix on speed 5-6 for 20seconds. Scrap down sides and repeat 3-4 times or until smooth.
  12. Spread mixture over the prepared base and refrigerate.
  13. Throughly wash and dry mixing bowl
  14. Make Chocolate Topping
  15. This is just a guide or feel free to make your own topping using coconut oil, cacao powder and maple syrup (to make it dairy free).

    In a clean and dry mixing bowl add dark chocolate melts and mill for 10 seconds on speed 8. Scrape down sides.
  16. Add coconut oil and melt on speed 3 for 1min at 50°C
  17. Spread chocolate mixture over slice.
  18. Refrigerate until set then take out of the slice tin and slice into portions. Store in an airtight container in the fridge.
