Filling

  • 5 g fennel seeds
  • 1 tsp cummin seeds
  • 5 g Mustard seeds
  • 1 leek, large
  • 80 g Prosciutto, diced
  • 30 g Butter or Ghee
  • 120 g mulitgrain bread slices
  • 6-8 sprigs flat-leaf parsley
  • 1 orange, zest only
  • 2 eggs, lightly beaten
  • 500 g pork mince
  • Salt & Pepper, to taste

Recipe's preparation

    Filling
  1. Place fennel seeds, cummin seeds and mustard seeds in tmx bowl and dry roast without MC on for 3mins/varoma temp/sp1.   

  2. Grind for 1min/sp9. Set aside in large bowl.

  3. Add roughly chopped leek to tmc bowl and chop 3secs/sp7. Scrape down sides.

  4. Add procsciutto and butter or ghee and saute for 3mins/varoma/sp1. Set aside with spice mix. Allow to cool.

  5. Place ripped up bread slices and parsley into tmx bowl and chop 5-10secs/sp7 or until breadcrumbs are formed. Add to reserved leek, prosciutto and spice mix. 

  6. Add orange zest, pork mince and half the eggs.  Mix together.  Season with salt and pepper. Refridgerate until needed.

  7. Pastry
  8. Pre-heat oven to 210 degrees. 

  9. Cut sheets of puff pastry in half to make 2 long resctangles. If using homemade pastry roll out to 5mm thick.  Shape pork filling into 30-40cm sausages,about 4cm wide and place on each rectangle of pastry. Roll up to enclose. Put rolls seam down on trays lined with baking paper.  Cut each roll into 6 equal pieces. Brush with left over egg and sprinkle with sesame seeds.  

  10. Bake for 15-20mins or until golden and cooked through.  Serve with chutney.

Tip

You could use onion instead of leek, pancetta instead of prosciutto. 

I zested my orange so it was very fine.  However, if you wanted to do it in the tmx bowl 5-10sec/sp9 do it after the bread crumbs.

You could also mix ingredients together in bowl for 10-20secs/sp5 or until it comes together.  I found by using the spatula to mix the filling in a bowl it was very light.

You could make these bigger if you wanted and cut each rectangle into 4 pieces. This may take a little longer to cook.

I think a nice homemade tomato chutney wold go well with these.  We found that they were good without sauce as well.
