  • 1 portion of shortcrust pastry, from the Basic Cook Book
  • 1 clove of garlic
  • 1 sprig of fresh rosemary
  • 2 sprigs of fresh mint
  • 1 tablespoon olive oil
  • 300 grams of diced pumpkin
  • 2 heaped teaspoons of crumbled feta cheese
  • 100 grams of frozen peas
  • 1 level teaspoon of balsamic vinegar
  • 8 leaves of fresh mint, for decoration

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Method
  1. Pre-heat oven to 180C. Grease a 23cm pie tin and set aside.

     

    Make 1 portion of shortcrust pastry from the Basic Cook Book or recipe chip. Put to fridge.

     

    Place garlic clove, rosemary-leaves only, mint-leaves only chop 3s/sp7.

    Pour olive oil, put diced pumpkin to the bowl and saute for 8m/120/Counter-clockwise operation/sp1.

    Meanwhile lined prepared tin with pastry and blind bake until golden brown about 15min.

    Place frozen peas, balsamic vinegar to the bowl and mix 3s/Counter-clockwise operationsp2.

    Spread the pumpkin mixture on the top of the pre-cooked pastry, crumble over feta cheese.

    Put back to oven for another 15-20min on 180C.

    Sprinkle with extra mint leaves on the top.

    Serve with bbq lamb chops.

Tip

You can serve with any meat from bbq or use left over roast and sprinkle some meat on the top before baking.
