Thick n Fluffy Banana Pancakes

  • 1 tsp Vanilla Essence/Extract
  • 160g plain flour
  • 40g wheatgerm

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Break in the bananas (approx. 3), weigh in the milk, add the eggs and a splash of vanilla.  Mix 20 seconds/speed 4

  2. Add flour, wheatgerm, salt and baking powder.  Stir 30 seconds (or until combined/speed 3

  3. Heat up two frying pans to medium heat (if you can, to speed up cooking time). 

  4. Add a spot of butter or coconut oil to the pan, and pour about 1/4 to 1/3 cup of batter and fry until some of bubbles remain open on top of the pancake. 

  5. Turn over and cook for another minute.  

  6. Store in a thermoserver until all are cooked. 

  7. Serve with maple syrup/a squeeze of lemon juice/fresh blueberries/slices of banana/fried bacon.

Tip

This recipe is enough for my husband, toddler and I.  We are big breakfast eaters.

Be careful to cook these on a medium heat, because the sugar in the banana burns easily.

Make the pancakes small so they turn easily without breaking.

Can be made dairy-free by substituting your favourite 'milk'.  My favourite is coconut milk.

Use 200g wholemeal flour if you have no wheatgerm, or just plain flour if you prefer.  

Freeze these in a stack with a small piece of baking paper between each one to make seperating them easier.

Perfect finger food for toddlers!
