Balsamic Berries with Mascarpone

  • 80 g balsamic vinegar
  • 5 tbsp white sugar
  • 1 tsp lemon juice
  • 500 g bag of frozen mixed berries, re-sealable
  • 1 l ice water
  • 250 g Mascarpone cheese
  • 250 g pouring (whipping) cream

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Defrost the frozen berries in the refridgerator overnight.

    Place 80g vinegar, 2tbsp sugar, and 1tsp lemon juice into the TM. Mix 80°C -- 8mins -- speed 1.5 (no cup).

    Allow balsamic mixture to cool.

    Pour the balsamic mixture into the bag of berries. Re-seal and toss the bag to coat each berry.

    Allow the berries to marinate in the fridge for at least 30mins, tossing occasionally.

    Rinse the TM bowl.

    Insert the butterfly whisk.

    Add 1L ice water to the TM. Mix 2mins -- speed 2 Counter-clockwise operation (no cup).

    Discard the ice water.

    Place 250g mascarpone, 250g pouring cream, 1tsp vanilla extract, and 3tbsp sugar into the cooled TM bowl. Whip at speed 3 until desired stiffness is achieved; watch closely through the lid hole to avoid overwhipping.

    Cover and refridgerate (for up to 4h).

    Serve a scoop of mascarpone with balsamic berries drizzled over the top.
