Panna Cotta

  • 900 grams double cream
  • 1 teaspoon fresh ginger sliced
  • 12 pods cardamom (flattened)
  • 100 grams caster suger
  • 10 grams Vanilla Paste
  • 12 grams Gelatine powder
  • 16 portions strawberries (8 cut in half)

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Cardamom & Ginger Panna Cotta
  1. Place the cream, sugar, ginger, cardamom pods (flattened)  and vanilla paste together into the thermie bowl and bring to a boil – Speed 3 for 8 min (can go longer if you want a more intense flavour).  Simmer gently for 8 minutes then turn off heat and strain.

     

     

    Dissolve the gelatine in some of the strained mixture until dissolved and stir back quickily into cream mixture.

     

    Transfer the mixture in another bowl and place the bowl into a sink of ice water and gently tirring.  When cooled down and just starting to thicken, pour into oiled (sweet oils) moulds and refrigerate until set.  Best to set this overnight

     

    Present with the strawberries and a spoon full of passionfruit….as seen in photo!

Tip

Gently stir the mixture above ice water while it's cooling and wait until it thickens slighly.  Then quickly pour it into the moulds.  This will suspend the vanilla seeds from the paste evenly through the mixture.
