Dark chocolate and orange mousse

  • 200 g Dark chocolate, good quality
  • 200 g thickened cream, 35% milk fat
  • 2 tablespoons Orange rind, Finely grated or chopped
  • 2 tablespoons Cointreau or grand mariner
  • 4 eggs, Separated

Recipe's preparation

    Dark chocolate and orange mousse
  1. Inserted butterfly. Add egg whites, which have been carefully separated from egg yolks, to clean and dry TM bowl. Beat, without MC in place, for 3 mins at 50 degrees on speed 4. Set aside. Quickly clean TM bowl. Place chocolate in TM bowl, , grate 5 to 10 seconds on speed 8. Scrape down sides and add cream. Melt together for 2 mins, 50 degrees on speed 3. Add rind and Cointreau. Add lightly beaten egg yolks and mix for 5 to 10 seconds on speed 3 to 4. Add egg whites and lightly mix on speed 3 for 5 to 8 seconds, careful not to beat all the air out of them. Place in individual dishes and refrigerate for 2 hours.
