LCHF Keto Coconut lemon vanilla custard

Ingredients

4 portion(s)

Custard

  • 1 lemon zested
  • 50 g xylitol
  • 400ml coconut milk
  • 3 free range eggs
  • 1 level teaspoon xanthum gum, Optional

Vanilla Extract dash

Recipe's preparation

    Blitz xylitol n lemon zest
  1. MC on and blitz 5 sec speed 6 scrape down sides 

    add all other ingredients including dash of vanilla extract put MC on and cook 70 degrees for 8min speed 4 

    enjoy hot or cold

Tip

Can substitute coconut milk for cream 

can substitute flavours

for less sweetness reduce xylitol

    Smile Lovely recipe!
    Doubled the quantities and used unsweetened almond milk instead of coconut cream as I wanted a more neutral flavour. Used powdered stevia instead of xylitol. Used 4 eggs instead of 6 for the double quantity. Worked perfectly. Will definitely be making this regularly.

    Loved it and will surely make again. I found it quite sweet enough with 40g xylitol. I added chopped banana on top for our guests who weren't eating LCHF and they loved it too.
    I might try it with cream next time as that's a lot lower in carbs, but using the coconut milk worked beautifully and I love d the coconut flavour.

  • i tried it without xantham

    i tried it without xantham gum but it was runny and so i too added the gum and it was perfect.. i also lessend the sugar and it tasted good not sweet at all though but we dont mind that. and we made it with chocolate instead of lemon.. we have never had lemon custard.. ill try it one day.

    Thank you so much for this recipe! I left out the lemon and used cream instead of coconut milk. I initially left out the xantham gum but it was thin, so I added a tsp and cooked a bit longer and it was perfect. A beautiful thick custard. Thanks again!
