Recipe's preparation

  1. Line a slice tin with baking paper (this step needs to be done first as once chocolate is melted you will not have time)

  2. Place lime peel strips into TM bowl and zest for 8 seconds, speed 9.

    Add macadamia's and chop for 3 seconds, speed 5.

    Set lime/macadamia mix aside.

    Place white chocolate into TM bowl and grate for 10 seconds, speed 8. Scrape down sides then add tin of condensed milk and cook for 8 minutes, 50 deg, speed 3. Scrape down sides and set for an extra 2 minutes, 50 deg, speed 3 if necessary (it should be uniform and glossy, quite runny)

    Once melted add the lime/macadamia mix and stir for 20 seconds, speed 2. Pour out into prepared tin and place in fridge/freezer to set.

    This makes a lovely gift in hampers once wrapped.

    Loved it - although it was quite soft. I tweaked the recipe. I probably used the peel of 3 limes (homegrown so they were quite small) I also used more like 520 grams of chocolate (didn't want to keep just a couple of squares.)

    It did turn out softer than other fudge I've made - but it was delicious
