- zest of 1 lemon
- 50g raw sugar
- pinch of nutmeg
- 300g of port wine
- 5 leaves of gelatine

TM 5Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
Place sugar, lemon rind and nutmeg into the bowl and mill 10 sec, speed 9
Pour port wine into the bowl and cook 5 min, 90 degrees, speed 2
Soak 5 gelatine leaves in cold water until soft (approx 5 min)
Squeeze the gelatine slightly to remove excess liquid.
Add gelatine through TM lid while going 1.30 min, speed 2
Strain jelly into a tray lined with baking paper and set aside to cool
Refrigerate to set
Serve with dusted icing sugar

I slightly tilted the simmering basket on an angle as I poured the jelly liquid into a lamington tray to catch any lemon rind and avioid excess splatter over my bench.
It's a very nice addition to a cheese platter
