Toblerone Chocolate Mousse

  • 750 g thickened cream
  • 300 g Toblerone
  • 3 egg whites

    Ingredients




    750g thickened cream

    300g Toblerone

    3 egg whites






    Method







    Insert butterfly into TM bowl add 750g of thickened cream and beat on speed 4 until the soft peaks form (watch closely .. in case you end up with butter!!)




    Remove whipped cream from bowl, place in bowl.




    Rinse & dry bowl. Add 300g of Toblerone broken in to pieces. Put lid & MC on and grate for 5 seconds on speed 8.




    Melt chocolate, 2mins at 37deg on speed 3 (this may vary depending on the temperature of the chocolate when it goes into the bowl).




    Remove from bowl, place in a bowl, stir and allow to cool a little.




    Place 3 egg whites in CLEAN AND COMPLETELY DRY BOWL (even the slightest amount of water/grease will stop the egg whites from beating). Add a pinch of salt. Insert butterfly and beat for 3-5 minutes at 50deg on speed 4 until there is no more fluid in the bowl.




    Add chocolate to whipped cream, stir through, add egg whites and fold through with a metal spoon until all combined.




    Cover bowl with glad wrap and refrigerate until set.




    Serve with fresh berries, crumbled chocolate & a dollop of cream!!

    I don't recommend using heat when beating the egg whites.

    Panoukla, the Toblerone is the chocolate.  It is sold in a long triangle shaped block in supermarkets.  300 grams needed for this recipe

    tmrc_emoticons.~ hi Mel, I would like to try this, sounds wonderful. There is not any chocolate listed in you ingredients list, I take it that it would be dark, but how much do I add? Also what is the purpose of heating of the egg whites to 50 degrees when whisking as I was thinking of doing this step in a mixmaster? I will score once I have tried it out. I have all your recipes in my collections. Any more up you sleeve?
