Aromatic Thai Fish Curry

  • 4 thick fish fillets (600 grams), cut into 3-4cm chunks
  • 2 Brown shallots, peeled
  • 2 cloves of garlic, peeled
  • 20 grams of olive oil
  • 50 grams of thai red curry paste (3 tablespoons)
  • 20 grams of vegetable stock (1 tablespoon)
  • 10 grams of fish sauce ( one tablespoon)
  • 10 grams of brown sugar (one tablespoon)
  • Juice of one lime
  • 100 grams of water
  • 1 400 ml tin of coconut cream
  • 100 grams of snow peas, cut in half
  • 80 grams of ribbon carrot, use your vegie peeler to do this
  • Handful of Corriander leaves

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Add shallots and garlic to bowl, chop 5 seconds, speed 5, scrape down bowl

    Add oil and cook 2 minutes, 100 degrees, speed 1

    Add red curry paste, cook 1 minute, 100 degrees, speed 2

    Add stock, water, coconut cream and cook 10 minutes, 100 degrees, speed 1 - MC of basket on top

    Add fish sauce, lime juice, brown sugar, snow peas, carrot ribbons and cook 2 minutes, 100 degrees reverse, speed 1

    Add fish chunks and cook for 3 minutes, 100 degrees, reverse, spoon

    If you have some thinner ends of fish pop them in at the 2 minute time through the hole in the lid

    Stir through the corriander leaves

    Absolutely delicious, I did the fish in the frypan and once they were cooked poured the sauce over the fish as I didn't know what the fish would do in the thermi, thanks for sharing

    I made this last night but it didn't work for me tmrc_emoticons.( The coconut cream curdled once cooking with the fish began. I checked the recipe and it says coconut cream in the ingedients but then coconut milk in the method? Maybe that's why.

    Absolutely loved this recip. I used light coconut cream. Next time I'll use less curry paste so the kids can eat it, was a bit spicy for small kids.
