Steamed fish with cumin chickpea puree

  • 4 thick pieces of fish I used Atlantic cod
  • 25 grams of olive oil
  • 1 medium brown onion, peeled and quartered
  • 2 cloves of garlic, peeled
  • 1 1/2 level teaspoons of ground cumin
  • 1 level tablespoon of either chicken or vegetable stock
  • 1 Cup of water
  • 2 standard tins of chickpeas, drained and rinsed
  • 1 level tablespoon of lemon juice
  • 1/2 cup of parsely
  • 2 cups of baby spinich
  • 2 tomatoes, diced

Recipe's preparation

  1. Add garlic and onion to bowl - chop 5 secs, speed 5 - scrape down bowl

    Add oil, cumin cook 2 mins, 100 deg, speed 1

    Add stock, lemon juice, chickpeas, cook 5 mins, 100deg, speed 1, MC OFF

    Add parsley and with MC ON puree - 8 seconds, and slowly bring to speed 7

    Place into thermoserver to keep warm

    With out washing the bowl add one litre of water, place fish in Varoma and cook 16 minutes, varoma, speed 2

    Meanwhile dice the tomatoes

    Around the 5 minute mark left for the fish - spread the chickpea puree onto the centre of the plates, place baby spinach on top then tomatoes then the fish and enjoy

    I need more stars for it. It's top of the class. The combination of flavours makes every mouthful a fresh delight. I could live on this.
