Bacon, Chorizo & Vegetable Frittata

Ingredients

Frittata

  • 50 g kale leaves
  • 250 g sweet potato, roughly chopped
  • 50 g beans, chopped
  • 80 g chorizo sliced
  • 150 g Diced bacon
  • 8 X-Large eggs
  • 1 red onion quartered
  • 65 g fetta ,cubed
  • 85 g Tasy Cheddar, cubed
  • Salt & Pepper, to taste

Recipe's preparation

  1. Preheat oven to 180 degrees. 

     

    Grease round pie dish

     

    Pour 1.1L of boiling water into bowl & steam Sweet Potato & beans in Varoma on Varoma temp, speed 4, 12 mins.

     

    Tip Sweet Potato & beans into greased pie dish. 

     

    Add bacon & chorizo to pie dish

     

    Weigh in cheddar, fetta, Kale, Onion & eggs. Chop 10 seconds, speed 5.

     

    Pour into pie dish over meat & vegetables.

     

    Bake approx 35min or until set.
