  • 1 tbsp vegetable oil
  • 1.5 tbsp Thai red curry paste
  • 1 tbsp curry powder
  • 3 leaves mint, fresh Vietnamese, Optional
  • 200 g coconut milk
  • 500 g chicken stock
  • 1/2 tsp palm sugar, Or raw sugar
  • 1 tablespoons fish sauce
  • raw prawns, peeled
  • Dumplings
  • noodle, udon
  • fresh coriander
  • Fried shallots

Recipe's preparation

  1. 1/ Bring a pot of water to the boil to cook noodles in

    2/ In bbl add veg or peanut oil, red curry paste and curry powder and sauté until fragrant. 3 mins / 120° / Sp 2

    3/ Add into bbl, Vietnamese mint leaves (if using), coconut milk, chicken stock, sugar & fish sauce

    4/ Into simmering basket Place dumplings in a single layer & cook 5 mins / 120° / Sp 2.5

    5/ Put your noodles to the boiling water on the stove & cook as per packet instructions (generally around 8 mins)

    6/ Add prawns on top of dumplings in the simmering basket and cook 5-8* mins / 120° / sp 2.5.

    7/ put cooked noodles into the bottom of your serving bowl and top with cooked dumplings & prawns. Divide bowl into 3rds for presentation - noodles on the bottom, dumplings to the left, prawns beside and leave room for the bok choy

    8/ put baby bok choy, into simmering basket stems first and cook over broth 3 mins / 120° / sp 2.5

    9/ add bok choy to serving bowl and pour over broth. Top with extra Vietnamese mint, coriander and fried shallots


    *Cooking time of dumplings and prawns will vary .. adjust as necessary and pull out once cooked. They will stay hot in your bowl while you finish your dish and the hot broth will reheat them

Tip

You can easily double this dish for a large family by doubling the broth and cooking dumplings, prawns and veg in the varoma for extra room
