Teriyaki Salmon with Rice and Sesame Vegetables

  • 50 grams mirin
  • 50 grams soy sauce
  • 15 grams caster sugar
  • 2 tbsp sesame seeds
  • 2 tbsp soy sauce
  • 1 tbsp Ketjap Manis
  • 3 tsp caster sugar
  • 5 tsp rice wine vinegar
  • 4 fresh salmon fillets
  • 320 grams Jasmine rice

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Marinade
  1. Place mirin, soy and sugar in TM bowl and simmer for 7 mins/100/speed 2 MC off.
  2. While this is happening, prepare your veggies and lay on top layer of varoma and set aside. You will need to choose and prepare them to a size that will be cooked at the same time.. Broccolini, snow peas and carrot sticks work well….beans, bok choy, baby spinach…
  3. Dressing
  4. To make dressing, place sesame seeds, sugar, rice wine vinegar and sauces in a small jug/cup and stir to combine. Set aside.
  5. Salmon and Rice
  6. When marinade is cooked, set aside in a small jug and add 1000gm water to bowl (don’t bother washing) Place simmer basket in place and weigh in rice (allow maybe 90gm per person)

    Place lid on bowl and varoma in place. Turbo 1 x 1 sec (this rinses the rice and ensures a better cook)
  7. Steam rice for 13 mins 30 secs/varoma temp/speed 4.
  8. Heat a large non stick frying pan over medium high heat. Brush skin side of salmon with teriyaki marinade and add to pan, skin side down. Brush the top with more of the marinade and turn after 3-5 minutes, depending on the thickness of your fillet. Continue to baste salmon with more of the marinade while cooking. It might be a bit of trial and error determining how big to prepare your veggies and how long they need, but if they are cooked before the rice is done, just remove varoma and set aside and put the MC back in place until rice is done. If they need longer, remove rice basket and continue steaming for a further couple of minutes. Your simmer basket will fit perfectly inside your round thermoserver if you want to keep your rice hot while the veggies finish cooking but everything should be cooked in the 13 minutes it takes the rice.
  9. Serve rice on to each plate and place salmon on top of rice, serve veggies to the side and spoon or drizzle sesame dressing over the top.
