Nimbus Limon Cocktail (Lemon Cloud)

  • 70 g raw sugar
  • 80 g egg whites, (or aquafaba)
  • 3 drops coconut essence
  • 120 g gin, (or other white spirit)
  • 40 g lemon juice, retaining rind for garnish
  • 4 drops vanilla essence
  • 120 g mineral water, sparkling
  • 200 g ice cubes
  • 3 tablespoons toasted coconut, to rim the glass

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Weigh sugar in to the mixing bowl and mill for 10s/sp10.
  2. Insert butterfly whisk. Retain half of the sugar in the mixing bowl and add egg whites/aquafaba and coconut essence. Whisk 4min/37deg/sp4.
  3. Add gin, lemon juice, vanilla essence and ice cubes. Blend 45s/sp5. Taste and add reserved sugar to preferred taste and blend 10s/sp5.
  4. Add mineral water and blend for 10s/sp5.
  5. Rub the rim of 4 x martini glasses with the lemon and dip in toasted coconut. Divide mixture between cocktail glasses and serve immediately.

Tip

Subsititute egg whites with 80g aquafaba for vegan option.
