Chicken meatballs
- 2 Carrot
- 1 egg
- 70 g panko crumb
- Italian seasoning 2 tablespoons
- 1kg chicken mince

- Add carrots, peeled and roughly chopped, to mixing bowl
Chop 5 sec / Speed 5
Scrape down the sides and set aside if too chunky; repeat if needed.
Add all ingredients (chicken, bread crumbs, Parmesan, carrot, egg) to mixing bowl
Mix 10 sec / Reverse / Speed 4
Scrape down sides and mix again 5 sec / Reverse / Speed 3, if necessary, until well combined.
Use a tablespoon to scoop about 2 tablespoons of the mixture
Roll into balls with damp hands and place on prepared tray.
alternatively use a dough scoop to make balls.
Bake for 24–26 minutes, or until golden and cooked through.
