Apple, Carrot, Coconut, Cinammon and Pecan Nut Muffins

Ingredients

For the Muffin Mix

  • 200 grams apples, cored
  • 2-3 carrots, roughly chopped (peeled if you like)
  • 4 eggs
  • 80 grams coconut oil
  • 250 grams raw sugar
  • 1 tablespoon Vanilla Bean Paste
  • 100 grams Chia Seeds.
  • 100 grams craisins
  • 100 grams pecan nuts, halved
  • 50 grams dessicated coconut
  • 2 tablespoons cinnamon powder
  • 300 grams bakers flour
  • 2 tablespoons baking powder

Recipe's preparation

    Preperation
  1. 1. Preheat oven to 180degrees (fanforced)

    2. Into TM Bowl add roughly cut carrots and quartered apples. Chop 5 seconds/speed 5 & set aside

    3. Place into TM Bowl eggs, coconut oil, sugar and vanilla bean paste. Mix 10 seconds/speed 4

    4. Add in chia seeds, craisins, pecan halves, dessicated coconut, cinnamon powder & reserved chopped carrots and apple . Mix 5 seconds/Counter-clockwise operation/speed 4

    5. Weigh bakers flour, add baking powder & mix 10-15seconds/Counter-clockwise operation/speed 3

    6. Spoon muffin mixture into pattie pans or into greased muffin tray and fill 3/4

    bake for approx 30mins or until skewer comes out clean

Tip

There are so many variants to this recipe - you can add coconut sugar on top of muffin mixture to add a bit of sweet crunch. You can use pear instead of apple, mix through some banana- these make a great breakfast muffin.

    Very nice! I substituted the bakers flour with almond meal and a couple of tbs of coconut flour. and only used 50 grams of coconut sugar and they are still sweet enough and have a nice little crunch too! If you like it sweeter, you can pour a little honey over the top. Using 200 grams less sugar might also avoid it to be dry.

    The flavour is delicious! I just made a couple of tweaks... After seeing how dry the mixture was, I added 100mls of milk which made them perfect. I also added less sugar (180g) and left out the pecans as it was for kids. Next time I will add less chia seeds.
    They were ready after only 20 mins baking too!

  • The flavour of these muffins

    The flavour of these muffins are really nice but I have to be honest, they were way too dry for my liking and in the oven way too long on that temp. I suspected they would be after I noticed how dry the mixture was. I will try adding milk or banana next time. Frustrating though as this recipe wasn't a quick one.
