Pastry Base

  • 1 lemon rind thinly peeled
  • 190 grams plain flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 50 grams sugar
  • 1 teaspoon baking powder
  • 125 grams Butter, cubed
  • 1 egg yolk
  • 2 tablespoons sherry vinegar

Recipe's preparation

    Base
  1. Preheat oven to moderate temperature.

    Peel lemon into TM bowl Speed 9 for 10 seconds, set aside.

    Place all dry ingredients into TM bowl then mix speed 5 for 3 seconds.

    Add cubed butter and 2 teaspoons of lemon rind, set dial to lid closed position and press turbo button 4 times.

    Add egg yolk and sherry to bowl, set dial to lid closed position and mix for 30 seconds on interval speed forming a smooth ball.

     

    Line 28cm x 18cm lamington/slice tin.  Roll out pastry and place in tin, trim edges.

     

  2. FILLING
  3. Peel (if desired) and quarter apples, place in TM bowl.  Set dial to lid closed position and press turbo button 3-4 times until roughly chopped, then spread evenly over pastry.

     

    Add sugar to TM bowl, set dial to lid closed postion and press turbo button once.

    Add eggs and mix on speed 4, 5 minutes or until thick and creamy.

    Add lemon rind, cream, softened cream cheese, flour and peel and mix on speed 5 for 1 minute 30 seconds.

    Add raisins and mix on reverse, speed soft for 5 seconds.

    Pour mixture over apples.

    Bake in a moderate oven for 1 to 11/4 hours.

    Whip extra cream on speed 4 until desired thickness, (approx 20-30 seconds).

    Pour over top of cold slice and sprinkle with extra cinnamon.

    No I mean the filling ingredints list.  How many apples, cream cheese etc. The instructions are there but not the ingredients.  Have checked this on both laptop and computer and ingredients definately not there.

    Hi Jan,

    This recipe we enjoyed warm with ice cream as it was baked, which was delicious,  then refrigerated it overnight and took it to friends  to enjoy with coffee,  which I think was even better.
