Apricot and Apple Nibbles

Ingredients

  • 120 g dried apricots
  • 100 g dried apples
  • 200 g Desiccated Coconut

Recipe's preparation

  1. 1. Line a loaf tin with baking paper.

    2. Add apricots, apples and coconut to TM bowl and blend  for 60-90 seconds/speed 8 until the mixture comes together (it can be quite damp and warm).

    3. Press into a loaf tin and chill in the fridge for at least 1 hour.

    4. When firm, cut into 2x3cm chunks or the size of your liking.

Tip

If your kids love the apricot bites you find in the health food section of the shops yet you...and your childs teachers...don't like the amount of sugar in or on them...try these!

 

1. You can use any dried fruit you like either by itself or mixed with others eg apricot, apple, pear, mango, apwpaw, pineapple, craisins, goji berries....

2. If the fruit is quite hard, soak it for 15 minutes in boiling water, drain then use.

    Lovely combination of flavours (I used apricots as per your recipe, but did 80g dried apples and 40g cranberries as I didn't have enough dried apples). My only query is how you got yours as thick as you did in the photo and serving size of 30 pieces. Mine yielded nowhere near enough to even come close to this.
