Base

  • 250 grams plain choc biscuits
  • 90 grams unsalted butter

Cheesecake filling

  • 75 grams raw sugar
  • 500 grams cream cheese
  • 4 eggs
  • 300 grams natural yoghurt
  • 200 grams white chocolate
  • 180 grams Baileys Irish Cream

Recipe's preparation

    Base
  1. Add biscuits to TM bowl and process for 10 seconds on speed 9. Add butter and process on speed 9 for 10-15 seconds. Line bottom of 24cm spring cheesecake pan with paper and press biscuit mix into base and 1/2 way up sides of - chill for 20 minutes.
  2. Cheesecake
  3. Preheat oven to 160c.
    Add raw sugar and mill 4 seconds on 8.
    Place cream cheese in TM bowl and process on speed 2 for 30 seconds. Add eggs (one at a time) and process for 20 seconds on 2.
    Add natural yoghurt, 15 seconds on 4, scrape, 5 secs on 4. Remove and set aside.

    Add choc to bowl and process for 10 seconds on 7, scrape.

    Warm for 4 mins on 50 speed 1, scrape half way. Ensure it is fully melted, then return cheese mixture to bowl. Add Baileys. Mix for 30 seconds on 4.

    Pour into prepared base.

    Bake for 1 hour (use a tray under the pan as the butter can drip) or until set (should still wobble slightly in centre). Allow to cool in oven with door open (stops the top from cracking) and refrigerate for 4 hours or overnight (overnight allows the Baileys flavour to develop more).

Pop a tray underneath in oven to stop butter dripping.

    I used sour cream instead of yoghurt, and added the Bailey's when I added the cream.

     

    Make sure you put a tray under the springform pan in the oven - butter drips from the base of the cake.
