Banana Raspberry Muffins

Ingredients

2 portion(s)

banana & raspberry muffins

  • 2 Bananas ripe, peeled
  • 2 eggs, large
  • 100 grams Rapadura Sugar (or brown sugar)
  • 50 gram macadamia oil
  • 220 gram flour plain
  • 1 teaspoon baking powder
  • 1/2 teaspoon bicarbonate soda
  • 1 teaspoon cinnamon
  • 100 gram walnuts
  • 150 gram raspberries, frozen

Recipe's preparation

  1. preheat oven to 160C & grease muffin tray with butter

  2. add bananas, eggs, sugar & oil to TM bowl, mix 10 sec speed 4

  3. add flour, baking powder, bicarb, cinnamon to TM bowl, mix 10 sec speed 4

  4. add walnuts & raspberries, mix gently 10 sec speed 2 reverse

  5. divide mixture evenly into 12 muffin tray & bake for approx 25 minutes

Tip

This is an old recipe handed down to me from my nana which she always made as a banana bread. I think she adapted it from an old Margaret Fulton recipe

    Love these muffins, I used fresh strawberries as they were in season and only had one banana so used a bit of mango. I used wholeheartedly flour to make them healthier as I wanted them for breakfast on the go. They barely cooled before half were eaten up by my girls.
