banana & raspberry muffins
- 2 Bananas ripe, peeled
- 2 eggs, large
- 100 grams Rapadura Sugar (or brown sugar)
- 50 gram macadamia oil
- 220 gram flour plain
- 1 teaspoon baking powder
- 1/2 teaspoon bicarbonate soda
- 1 teaspoon cinnamon
- 100 gram walnuts
- 150 gram raspberries, frozen
Recipe's preparation
preheat oven to 160C & grease muffin tray with butter
add bananas, eggs, sugar & oil to TM bowl, mix 10 sec speed 4
add flour, baking powder, bicarb, cinnamon to TM bowl, mix 10 sec speed 4
add walnuts & raspberries, mix gently 10 sec speed 2 reverse
divide mixture evenly into 12 muffin tray & bake for approx 25 minutes

This is an old recipe handed down to me from my nana which she always made as a banana bread. I think she adapted it from an old Margaret Fulton recipe

Love these muffins, I used
Love these muffins, I used fresh strawberries as they were in season and only had one banana so used a bit of mango. I used wholeheartedly flour to make them healthier as I wanted them for breakfast on the go. They barely cooled before half were eaten up by my girls.
