  • 450 grams Can crushed pineapple in syrup
  • 120 grams Butter
  • 370 grams mixed fruit peel
  • 1 cup sugar
  • 1 tsp mixed spice
  • 1 tsp bi-carb soda
  • 1 cup Self Raising Flour
  • 1 cup plain flour
  • 2 eggs, beaten

Recipe's preparation

    Bev's Fruit Cake
  1. 1. Grease and line a 22cm round cake tin with baking paper

    2. Add to bowl: crushed pineapple, butter, mixed fruit, sugar, mixed spice and bi-carb soda. Set to 90'C for 15 minutes, reverse speed 1. 

    3. Pour mixture into a bowl to cool room temperature. 

    4. Stir in other ingredients. 

    5. Pour into prepared cake tin and bake on bottom shelf of oven for 50-60 minutes or until an inserted skewer  comes out clean. 

    6. Allow to cool in tin for 5 mins before turning onto rack to cool.

    Made it yesterday and just had a slice for morning tea and it is a nice cake, have saved the recipe for future baking.

    Also noticed that the cooking temperature wasn't add to the recipe, so I decided to go with 150 degrees but should of made it 180 degrees as I was back and forth to make sure I didn't burn it.
