Coconut & Chia Seed Bread

Bread

  • 250 g skim milk
  • 50 g coconut milk powder
  • 2 eggs
  • 75 g coconut oil
  • 190 g raw sugar
  • 350 g Self Raising Flour
  • 100 g Shredded coconut
  • 10 g chia seeds

Recipe's preparation

  1. Preheat oven to 180 degrees.

    Line a loaf tin with baking paper.

    Put skim milk, coconut milk poser, eggs and coconut oil in TMX bowl. Mix on speed 5 for 5 seconds. 

    Add sugar, flour, coconut and chia seeds. Mix speed 5 for 10 seconds.

    Put mixture into loaf tin.

    Bake for 55 minutes.

    I used only 30g sugar, soaked the chia coconut mix over night in coconut milk instead of cows milk.

    Nice flavour.  Makes quite a lot of batter - I ended up dividing into 1 loaf pan & 4 cupcake/muffin size.  I didn't have any coconut milk powder so added that weight in dessicated coconut.

    I cooked 55 minutes at 160 degrees C fan forced oven (my oven is very efficient)
