Gluten-free, flavour-full, moist, apple spice muffins

  • 125 grams Butter or nutlex for dairy free
  • 3 Apples (any sort), Peeled, cored and sliced into chunks
  • 150 grams brown sugar
  • 2 eggs
  • 1 level tsp Fresh or minced ginger
  • 240 grams Gluten free plain flour
  • 1 level tsp Bi-carb soda
  • 1/4 level tsp xanthan gum (if you have it)
  • 1 level tbsp mixed spice
  • 1 level teaspoons ground cinnamon
  • 1/2 level teaspoons ground nutmeg
  • 100 grams almond meal

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Before prep: Grease 12 muffin tin tray, heat oven to 160 degrees celsius.
  1. Add butter, with MC on, melt for 1 min, speed 2, at 80 degrees
  2. Add apples to butter. Mix speed 4.5 for 15 seconds.
  3. Add brown sugar. Mix at speed 4 for 10 seconds
  4. Add all other ingredients. Mix on speed 5.5 for 1 minute
  5. Spoon mixture into pre-greased muffin tins.
  6. Bake for 20 mins. Allow to cool in the muffin tins.

    (but try one while they're warm!)
