- 1 zest of lemon
- 200 gram sugar
- 300 grams Self Raising Flour
- 2 teaspoon vanilla essence
- 180 gram Butter, softened
- 160 gram Milk
- 3 eggs
- 45 gram poppy seeds

Recipe's preparation
Place the strips of lemon peel and the sugar in the bowl.
"Closed lid" blitz in 2 second sessions until rind is finely grated.
Insert the butterfly
Add the rest of the ingredients in the order of the recipe
Mix 3 minutes/"Counter-clockwise operation" /speed 3
Place mixture into pattypans and cook in a moderate oven for approx 20 minutes.
Turn halfway through cooking for a even colour
Remove from oven when tops are brown and the muffin springs back when pushed
Cool in tin for 3 minutes and then carefully remove
Make a lemon syrup by mixing two tablespoons of sugar with the juice of the lemon that you zested.
This can be used as is, or you can cook it for a few minutes in a small saucepan. Pour a teaspoon over each muffin while still hot.

Tip
You can make icing with the lemon juice. I find for freezing the lemon syrup is better.
