1 Variation Edna's Lemon Curd Teacake

Recipe's preparation

Cake Mixture

[size= large]To make cake mixture, place all ingredients into TM bowl and beat for 30 seconds on speed 5. Remove from bowl and set aside.

Lemon curd

[size= large]To make lemon curd, place all ingredients into TM bowl and cook at 100 degrees for 5 minutes on speed 4.[/size]

Cake

[size= large]Grease and line a round cake tin.[/size]
[size= large]Spread half the cake mixture into the base of the tin (the cake mixture will be quite thick, I usually spread it with wet fingertips.)[/size]
[size= large]Pour lemon curd over cake mixture (the lemon curd mixture will be quite runny.)[/size]
[size= large]Dollop 1/2 teaspoonfuls of remaining cake mixture over the top of the lemon curd.[/size]
[size= large]Bake in 180 degree celsius oven for 15min or till golden[/size]
[size= large]Eat warm or cold.[/size]
