Amazing Grain Free Bread Rolls (yeast free, dairy free, gluten free)
  • 200 grams raw almonds
  • 25 grams psyllium husks, (5 tablespoons)
  • 2 teaspoons baking powder
  • 1 teaspoon Himalayan/Celtic Sea Salt
  • 3 egg whites
  • 250 grams boiling water
  • 2 1/2 tablespoons apple cider vinegar

Recipe's preparation

  1. Preheat oven to 175 degrees C.  Line a baking tray with baking paper.

  2. Place almonds and psyllium husks in TM bowl and grind for 10 seconds at speed 9.  Add baking powder and salt and turbo 3 or 4 times to combine.

  3. Add egg whites and vinegar and knead for 20 seconds.

  4. Weigh in boiling water (MUST be boiling) and knead immediately for 1 minute.

  5. Dough will be very sticky but workable with a spatula.  Form into 5 medium ovals and place on baking tray.  Bake for 50-55 minutes until risen and browned and cooked through.  Remove from oven and cool on wire rack completely before slicing.

I highly recommend that you read this blog post and watch the video.  Although this worked for me first time and I found it straightforward (and completely delicious and amazing!!), there seem to be a number of variables that have led to mixed success with this recipe.

The blog post also gives a nut-free version using coconut flour.

    Love this recipe! I originally made it for my niece who is type 1 diabetic and gluten free, and she was delighted to be able to again take sandwiches / rolls to school again for lunch for the first time since her diagnosis. However my kids and husband also decided they liked them too, even though non of us are gluten free. I've just made a batch of dinner-sized rolls and we've eaten them with a bowl of soup for dinner. Totally filling and satisfying.

    Loved them thank you! I made the first batch and it dissapeared at the dinner table.

    Made the second batch , i made them a little smaller like a dinner roll instead. And cooked them for longer as i found the dough was still uncooked in the centre.. Second batch came out perfect .

    Fantastically amazing....so very unusual in texture and taste, but an absolute winner for the GF folk amongst us. Don't know how I would have done it without a silicone mat. Cut dough into 6, made roundish with a spatula as suggested then turned over onto the baking tray...needed the full 55 mins and perfection!! Thank you so much for a great recipe.

    Delicious and really easy! It was eaten by the whole family. My hubby said that it tasted like it was a really expensive bread rolll due to its light texture. It held together really well with no bublles and would make a great roll to make a sandwhich on. This will become a regualr bread substitue at our house tmrc_emoticons.)

    MAybe your oven was too hot? Mine only browned very slightly, but were cooked beautifully all the way through, without the bubbles at the top. 

    The water I added was really boiling, too - perhaps that helped?

    I didn't have almonds: only walnuts. It worked just fine. Although, it wasn't "bread" it was great for holding chicken and salad inside for our picnic dinner. 

    Thanks for the warning about the weird consistency as we spatula it out of the thermomix and on to the baking paper. I would have really struggled without that tip!

    Fantastic recipe. Andrea, thank you so much. As I have one of these each day I do not miss "normal" bread at all.

    They work out perfectly each time and last me for 4 to 5 days as long as I warm each roll in the oven for a couple of minutes to crisp it up. Big Smile

    I love this recipe and have made it a few times, but no matter what I do I end up with hollow buns, with a dense base, and a thin upper crust.  If anyone can hand me a clue as to where I'm going wrong, I'd be most grateful.  That aside, they still taste great and I love them fresh out of the oven with soup, or with some grilled tomatoes avocado and cheese.

    These Rolls are a winner, would like to try adding to them flavour savory or sweet, made with Almonds and Cashews, used the egg yolk for an omelette, they have turn out great will make again, such a quick dinner

    Hi,

    I tried these tonight and, they are amazing. They looked fantastic with lovely color and nice crust. I let them cool a little before slicing open. The inside texture was really good and I loved the taste - the Apple cider added something really unique. I would definately recommend these if you are gluten and/or dairy free. They would be something to look forward to, rather than a necessary substitute that disappoints yet again. 

    I would recommend these.

    Hi sorry to be a party pooper but I am confused! As I understand since being put on a yeast free diet - vinegars are forbidden because they are fermented & all fermented foods are not allowed on a yeast free diet. maybe ACV is different for some reason? I will find out more coz they sound yummy & I want to try them!
