Beignets (From New Orleans, USA)
- 1 teaspoon Yeast, heaped
- 200 g water
- 20 g Copha
- 100 g sugar
- 1/2 tsp salt
- 1 egg
- 150 g evaporated milk
- 615 g plain flour
- oil, for frying
- icing sugar, for topping

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- Add yeast, water and copha to the mixing bowl. Dissolve 3 mins/37C/Sp1
Add Sugar, Salt, Egg and Evaporated Milk. Mix 20sec/Sp5
Add 365 g of Plain Flour. Mix 10 sec/Sp5.
Scape down and add remaining 250g Flour. Mix 20sec/Sp4.
Dough will be sticky, so tip immediately into a bowl, and let rest and chill fo up to 24 hours.
Roll out dough 3-4mm thick, and cut into 6cm squares. Fry squares in 180C hot oil. If Beignets don't pop up, oil is not hot enough. Drain onto paper towel.
Shake icing sugar on hot beignets and serve warm.

Tip
You can also try frying in strips, so you have beignet 'fries' and serve with warm white chocolate ganache.
Beignets are pronounced 'Ben-yay'.
