Bubur Sumsum

  • 100 g rice flour
  • 800 g water
  • 200 g coconut cream
  • 3-4 pandan leaves, tie into a knot
  • 1 tsp salt

Palm Sugar Syrup

  • 200 g palm sugar
  • 3 tbsp raw sugar
  • 250 g water
  • 2 pandan leaves, tie into a knot
  • 1 pinches salt
  • 1 tbsp tapioca flour

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Bubur Sumsum
  1. Place rice flour and water in mixing bowl and mix 10 seconds/sp4.
    Add the remaining ingredients and cook 25min/Varoma/Counter-clockwise operation/sp2.5.
  2. Palm Sugar
  3. While Bubur Sumsum is cooking, prepare the sugar syrup.
    In a small saucepan, add palm sugar, raw sugar, water, pandan leaves and salt. Bright to boil and reduced heat to medium and keep cooking for 10 minutes until mixture slightly thickened.
    Add tapioca mixture and bring to boil. Serve with bubur sumsum.

Tip

Pandan leaves and palm sugar can be found in Asian shop.
Palm sugar is known as Gula Jawa in Indonesia. It has a drak brown colour that produce the nice dark brown sugar syrup.
