Honey and Chilli Baked Chicken

  • 1 onion, quartered
  • 2 chilli, fresh, Red, seeded and roughly chopped
  • 1 tablespoons ginger, fresh or paste
  • 1 stalks coriander, save leaves for garnish
  • 4 cloves garlic
  • 1 teaspoons salt
  • 170 grams honey
  • 55 grams tomato sauce, Use siracha if you prefer it hot or a mixture of both
  • 1 teaspoon fish sauce, optional
  • 8 chicken thigh, Can use cutlets or drumsticks also

Recipe's preparation

  1. Place all ingredients into your TM bowl and blitz 30sec/speed10.
    scrap down sides of mixing bowl then repeat. Keep blending until you have a smooth paste
  2. Place the chicken in a large bowl or zip lock bag and pour over marinade. Leave in the fridge for at least 2 hours if possible.

    Preheat oven to 200 degrees
  3. [color=#1b2024; font-family: Roboto, Helvetica, Arial, sans-serif]Place a sheet of baking paper in the bottom of a baking dish and arrange the chicken on top. Roast for 40 minutes or until browned and cooked through. Transfer to a serving plate. Roughly chop the reserved coriander leaves and scatter over the top to serve with lime wedges.[/color]
