Savoury Muffins

  • 100 grams cheese, Cut into 2cm cubes
  • 1 onion, Cut in half
  • 2 zuchinni, Cut into chunks
  • 2 carrots, Cut into chunks
  • 100 grams Diced bacon
  • 6 eggs
  • 160 grams Creamed Corn
  • 170 grams self-raising flour
  • 40 grams oil
  • Salt and pepper

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Savoury Muffins
  1. 1 - Pre heat oven to 180'
    2 - Line 12 muffin holes with cases
    3 - Place cheese into Closed lid and grate for 8 seconds speed 8, set aside once done
    4 - Place zuchinni and carrot into Closed lidand chop 3 seconds speed 5, set aside once done
    5 - Place onion into Closed lid chop 5 seconds speed 6, once done add diced bacon and oil sauté 3 minutes 100' speed 1 Counter-clockwise operation
    6 - Add all other ingredients and mix 20 seconds speed 4
    7 - Scrape down sides and mix 10 seconds speed 4
    8 - Fill muffin cases 3/4 full and place into oven for 25-35 minutes, remove and let cool.

    This recipe is more of a quiche than a muffin recipe.I found it useful for lunchboxes.

    Used silicone muffin cases.Yielded 21.


    Substituted fine biltong for bacon and corn kernels instead of sweet corn.

    Squeezed out moisture from zucchini after chopping up

    Baked 170 ff for 30 minutes

    Idaster: I've made them twice. Both times leaning towards 'quiche' but I love them. And yes, if you're not a big fan of eggs, then they would be a bit eggy.

    Used half cheddar, half Parmesan (that's what I had), added capsicum and a tsp of veggie stock paste. Delicious. Mine turned out slightly more a zucchini slice texture than a muffin, but the flavour was amazing. Hoping they freeze well as I got 27. Will be great for breakfast on the go or mid morning snacks.

    I went to try one warm (because they smelt sooo good!) but they are quite wet inside, do they harden up when cooled down? I cooked at 180 for 40mins

    I did a straight swap with GF SR Flour and it worked really well 👍 My mixture made 6 very large Cafe sized muffins which will be a regular here now.
    Oh, I also left out the cheese and added a tablespoon of Veggie Stock paste to make them Dairy free 😉
